Espresso Brownies- Guest Blogger Post

When Cathe asked me if I wanted to write a guest post on her blog, I thought it sounded like fun! Then I realized, what the heck am I thinking, I’m not nearly as artistic and creative as Cathe, what could little ’ole ME possible have to add to Just Something I Made? It’s funny, almost every day I find a million things to babble about on my own blog, but when it comes to a blogging REQUEST, I freeze.

So I started thinking, what am I passionate about? I should write about that. Then it hit me…. I’m passionate about baking! I love to bake, not real fancy desserts, but just easy yummy goodies that my family and friends love. When I mentioned a recipe to Cathe, she thought it was a great idea because she never posts recipes. But Cathe is VERY creative, so I’m going to post an unbelievably EASY treat that will knock your socks off AND show you how we wrapped it up as a special delight that anyone would love to receive!

Espresso Brownies

1 prepared Brownie Mix ( I use the Ghirardelli Double Chocolate Brownie Mix)
1 extra egg
1 teaspoon of espresso powder (I just used regular espresso found in the coffee aisle)
powdered sugar

Antique jello molds (I found mine on ebay really cheap)

Combine brownies according to the box, and add an extra egg and espresso powder and start mixing.

Spray jello molds VERY well with cooking spray.

Fill each mold about 1/2 way.

Bake about 25 to 30 minutes or until brownie starts to pull from side of pan, cracks start to appear in surface and center is almost set. (Toothpick inserted in center will be dirty, but not wet.)

Cool about 10 minutes and then remove from pans; cool completely on wire rack.

garnish with a dusting of powdered sugar.

Now delicious tastes a LOT better when it’s CUTE right? So now you need a cute presentation if you ‘d like to give a few as gifts .

We made these for a birthday my oldest daughter took to work. We took a cellophane bag, put some crinkled pink paper in the bottom, and placed one brownie on top, tied the bag shut with some cute ribbon. Next time I’d love to make some cute tags for them (I bet Cathe could come up with some BEAUTIFUL tags)………..wah-lah……..now you have an adorable treat!!
